What the Tefal Dolci cocktail programme does

The Tefal Dolci cocktail programme turns a frozen cocktail base into an iced drink, the kind you'd order at a beach bar: piña colada, frozen fruit cocktails, creamy after-dinner drinks. The Moulinex Dolci has the same COCKTAIL button, because it's the same machine.

You freeze the base in the Tritan bowl for 24 hours at −18 °C, then press COCKTAIL. The blade spins and shaves the block into a smooth, icy drink.

The machine does the hard work of shaving the ice. Your job is the base: the right mix of fruit, sugar and spirit, frozen solid. Get that right and every cocktail comes out smooth, not watery.

Why the base can't be too alcoholic

This is the most important rule. Alcohol doesn't freeze like water: it lowers the freezing point of the whole base. Too much and the block stays soft and slushy in the freezer, and the programme can't shave it properly.

• Keep the spirit a small part of the base, with fruit, juice, coconut or cream making up most of it.
• Remember sugar also softens the block: sugar and alcohol together need balancing.

Start with a piña colada

Cocktail too liquid or too hard?

• Too liquid: there's too much alcohol or sugar. Next time reduce the spirit.
• Too hard or crumbly: add a splash of cold juice and press RE-SPIN (about 1 min 30 s).

Frozen cocktail ideas and the other drink programmes

COCKTAIL is one of four drink buttons. For alcohol-free versions, use SLUSHY for granitas, FRAPPE for thick iced coffees and MILKSHAKE for milk and ice cream.

Once the balance is right, the COCKTAIL button opens up a lot of drinks:

• Piña colada: pineapple, coconut and rum, the classic.
• Frozen fruit cocktails: strawberry, mango or passion fruit with a small measure of spirit.
• Creamy after-dinner drinks: coffee or chocolate bases with a liqueur.

For a party, freeze two or three bowls the day before: the Dolci comes with three. Serve each cocktail as soon as the cycle ends, in a cold glass. And if some guests don't drink alcohol, make the same base without spirit on SLUSHY. Always drink responsibly.

Step by step

1. Prepare a cocktail base with fruit, juice or coconut and only a small amount of spirit.
2. Pour it into the Tritan bowl, put the lid on and freeze for 24 hours at −18 °C.
3. Check that the block is solid: if it's still soft, there's too much alcohol.
4. Fit the frozen bowl in the Tefal Dolci and lock it.
5. Press COCKTAIL and let the cycle run.
6. Too hard? Add a splash of cold juice and press RE-SPIN.
7. Pour into a glass and serve straight away. Drink responsibly.
