Come funziona Tefal / Moulinex Dolci.

Tefal Dolci and Moulinex Dolci are the same machine, made by Groupe SEB and sold under two different brands depending on market. They work in a unique way: they process pre-frozen mixtures, they don't do traditional churning.

The 1-Step Perfector mechanism

Unlike a traditional ice cream maker (which cools and churns liquid mixture at the same time), the Dolci operates in reverse: first you freeze the mixture for 24 hours, then the machine processes it.

⟳ The blade spins in a fixed position.

The dual-action blade is magnetically attached to the top lid. It stays fixed in position and rotates on itself from above. It does not move downward.

⇅ The bowl rises and lowers.

It's the 480ml Tritan bowl that lifts via an internal elevator mechanism. It rises progressively toward the blade that meets it from above, scraping the frozen block layer by layer. Then it lowers and rises again during the program.

⊛ Dual action: scrapes and incorporates air.

The Tefal Dolci blade has a dual-action geometry: it shreds the frozen block while simultaneously incorporating air into the mixture. The result is a creamy texture similar to Italian gelaterias.

Each program is calibrated with different blade speeds and times, optimized for a specific preparation type. The machine has 6 scoopable programs and 4 drinkable programs.

Differences from traditional ice cream makers

A traditional home ice cream maker (compressor or pre-frozen bowl) works during churning: cools and stirs the liquid mixture simultaneously. The Dolci works after: the mixture is already frozen, the machine turns it into cream. Two completely different technologies with different advantages.
