Tefal Dolci, one year on: how to keep it on your bench, not in the cupboard

The Dolci arrived in Australia in October 2025 with plenty of buzz. A year later its owners know both sides: the first creamy sorbet that tastes like real fruit, and the tub that sits in the freezer a little longer each week. Your machine works perfectly: it’s the recipe that lets it down.

Tefal launched the Dolci with a Nesquik partnership and a long list of programs: ice cream, sorbet, gelato, frozen yoghurt, slushy, frappé, cocktail, milkshake. Lifestyle and tech media covered it widely (Pickr, Pedestrian, Nine, GadgetGuy, Women’s Weekly Food) and prices came down quickly in the first sales season.

Behind the launch there is something more interesting than a new appliance: a method. The Dolci doesn’t churn a liquid like a classic ice cream maker. It takes a base that is already frozen and shaves it into a creamy texture, portion by portion. That idea comes from professional kitchens, where the Pacojet has done it for decades. It changes how you cook, not just how you make dessert, and that’s where most owners never get to.

Icy or grainy

Why: too little sugar or solids for the water in your fruit. The base freezes rock hard and the blade can only shave ice. Riper fruit, a different variety or a can in syrup changes everything.

Chef’s fix: balance before you freeze, then finish with RE-SPIN (a spoon of juice or water if it’s very dry).

Every home machine follows the same curve. The first weeks are a festival of flavours. Then the routine thins out: one sorbet that turned icy, one evening without a frozen tub, one more gadget on the bench. Even the launch coverage asked whether it would “gather dust once the novelty wears off” (Women’s Weekly Food). Australians say the same about kitchen gadgets in general (EveryPlate research via ACM), and second-hand listings tell the rest: Dolci units described as “brand new and unused” (Gumtree).

    Programs, freezing and the manual, in plain English

    • Freeze level, below the MAX line, for about 24 hours, with the lid off for the first hours and on afterwards.
    • Choose the program that matches the recipe (SORBET for fruit, ICE CREAM, GELATO, lighter recipes…). If the result is crumbly, run RE-SPIN, adding a spoon of liquid if needed.
    • Add chocolate, nuts or biscuits with MIX-IN, in small quantities.
    • Don’t refreeze a tub after spinning: spin what you’ll serve.
    • Error codes and safety instructions are in your manual: follow the manufacturer’s instructions for your model.

    Is the Tefal Dolci sold in New Zealand?

    Yes, Kiwi owners use the same Dolci. Check the plug and the warranty if you buy it from overseas.

    Why is my Dolci sorbet icy or grainy?

    Almost always the recipe, not the machine. With too little sugar or solids the base freezes too hard and the blade can only shave ice. Light and low-sugar recipes are the most affected. A balanced base, frozen level for 24 hours and finished with RE-SPIN, fixes most of it.

    How long do I freeze the tub, and at what temperature?

    The Australian manual asks for a freezer between −13 °C and −22 °C and about 24 hours. Freeze the tub level, without the lid for the first hours, then close it.

    Can I put leftover ice cream back in the freezer?

    The manual says not to refreeze after spinning. Plan portions so you spin what you will eat: that is exactly what the ICED METHOD APP helps you do.

    Where do I find dextrose in Australia and New Zealand?

    In the home-brew aisle: for example Brigalow dextrose at Woolworths and Big W in Australia, Murdoch’s at PAK’nSAVE in New Zealand. Some brewing sugars are blends with maltodextrin, not pure dextrose.
