Why it works: A rich, boozy pudding loves something custardy: the zabaione cream does the job of brandy custard, cinnamon and caramel echo the spices and treacle.
Why it works: Speculoos and cinnamon roll pick up the mincemeat spices; creamy orange lifts the dried fruit and peel.
Why it works: Hazelnut and caramel suit the nuts and marzipan; an orange sorbet cuts through a rich slice.
Why it works: A chocolate log wants contrast: stracciatella, mint or orange freshen it up.

Prosecco, champagne and other sparkling wines can go into a sorbet, but alcohol lowers the freezing point: past a certain amount the sorbet stays soft even at −18 °C. Move the slider to see how much fizz your base can take.

480 ml tub. Use GELATO for creams and SORBET for sorbets. Pieces of pudding, mince pie or biscuits go in at the end with MIX-IN, never into the base you freeze.
ICE CREAM or GELATO for creams, SORBET for sorbets, then MIX-IN for pieces. If it comes out powdery: RE-SPIN with a spoonful of milk.
Take the tub out 5–10 minutes before the spin: the blade works better and the ice cream comes out creamier.
Carry it in the closed tub in a cool bag with ice packs and do the spin at your host’s house.
